🥘Ajiaco con pollo 🐔



In Colombia soups are sacred. Most of the dishes are accompanied by their respective soup. And speaking of representative soups, the ajiaco con pollo wins the popularity award. This soup will be found especially in the central Andean region of the country, in Bogotá and the surroundings. Its main ingredients are chicken, Creole potato or yellow potato, cob and arracacha.

If you visit Bogotá, you will find in the Candelaria neighborhood several restaurants specialized in this dish. I was coming down from Monserrate and the cold weather in Bogotá made me want an ajiaco with chicken, which in general will be served with white rice and avocado.
